A strong powdered improver dedicated to soft bakery fermented products, sweet buns & doughnuts. Dosed at 1%, Soft'r Cotton contains softness enzymes for keeping the product soft over several days. As it's concentrated formulation, it's cost effective to use across soft bakery product ranges.
For wholemeal, soft rolls, sweet goods and doughnuts us at 2% on flour weight.
For toast bread use at 0.8% on flour weight.
