Working method

Batter

Using a planetary mixer and beater, combine all ingredients and mix on slow speed for 1 minute. 

Mix for a further 2 minutes on medium speed.

Deposit the batter at 360g into greased 9" square foil trays. 

Time: 15 / Oven Type: Deck / Top Temperature: 180 °C Bottom Temperature: 180 °C / Damper: closed 


Philippines Ganache

Heat the cream, milk, glucose, and butter to 80c then pour over the chocolates. Mix to form a ganache then blend with a stick belnder to homogenise. 


Assembling
Pour 400g of ganache over a cooled brownie base and set in the dridge for a minimum of 3 hours before cutting into squares.
