Add the eggs, egg whites, oil and water into a mixing bowl for a planetary mixer with a paddle attachment.
Add the satin cake mix on top.
Mix on slow for 2 minutes, scrape down, mix on fast for 2 minutes. Mix on medium for 1 minute.
Place into 2 lined and greased tins, 7" diameter Bake Turn out on to wire rack and leave to cool.
Make up the Cremyvit by adding 500ml water to 200g Cremyvit powder and whip in a planetary mixer with a whisk to make a custard.
In a new bowl, with a whisk, whip up the Ambiante to form a cream.
Take half the custard and half the cream, and whip together with 200g of Deli Citron.
Slice open the sponges and arrange in a ring with an acetate lining.
Place the sponge on the bottom and add a small layer of lemon cream.
Then add a ring of raspberries around the outside to face the acetate lining and add a centre ring of Deli Citron.
Add a smaller centre ring ( 6" ring) of sponge, then add raspberries in the centre, followed by lemon cream and add the sponge on the top.
Dilute the Harmony Classic with 30g water and the Classic Raspberry CL.
Warm to 90°C and pour on top of the sponge layer.
Leave to set and add the raspberries for decoration.
