Working Method

Toffee Cake Batter

Using a planetary mixer and beater, combine the ingredients. 


Mix on slow speed for 2 minutes then scrape down.

Mix on medium speed for 3 minutes.

Deposit into individual foil trays at 60g. 

Time: 20 / Oven Type: Deck / Top Temperature: 160 °C Bottom Temperature: 160 °C / Damper: closed 


Caramel Buttercream

Beat the butter until soft and then sift in the sugar. 

Mix slowely to combine then on medium speed until soft and smooth. 

Add the Deli Speculoos and mix to clear. 


Decoration
Pipe 90g of Deli Speculoos over the cooled cakes and top with 75g of buttercream. Finish with a sprinkle of biscuit crumb.
