Mango-Filled Cheesecake Recipe

Working Method

Hazelnut Sponge

Using a planetary mixer and whisk, combine all of the ingredients and mix for 2 minutes on slow speed. Mix for 5 minutes on high speed. Spread on a 60x40cm tray at 7mm.

Time: 14 / Oven Type: Deck / Top Temperature: 180 °C Bottom Temperature: 180 °C / Damper: closed / 15% Water loss


Biscuit Crumb

Melt the Mimetic Incorporation and stir through the dry ingredients. Spread at 3mm into the desired mold, compress and freeze. 


Mango Lime Lemon Filling
Mix all ingredients together and mold into a silicon mold.

Deli Cheesecake Mousse

Pre-soak the gelatin at least 15 min. before using. use the deli cheesecake at 20 degrees Celsius and add the melted gelatin. Incorporate the whipped cream into the base at 25°C.


Velvet Spray
Melt both together and spray on the frozen mousse as a final step.
