Method

Cookie

Place the Satin mix, butter, flour and syrup in a mixing bowl with a paddle attachment.

Mix on slow to form a crumb

Pour in the water, mix on slow to form a dough, you may add more water if required

Add the Smoobees, mix on slow for 30 seconds

Divide the dough out in to 60 grams form them into pucks using a cookie cutter.

Craquelin

Cream all the ingredients for the craquelin together.

Product build

Roll out between 2 sheets of silicone paper to a thin layer and freeze

Once frozen cut them into discs of the same size as the cookie puck.

bake at 190°C for 14 mins.
