Using a planetary mixer & beater combine all of the coconut dough ingredients, mix on slow to form a dough, weigh into 30 & 60g balls & roll in coconut.
Place evenly spaced onto lined double baking trays.
Bake at 180˚C for 18 mins for small pieces & 22 mins for large pieces.
Once cooled dip the large pieces in Carat Cover White at 45°C, sprinkle with coconut.
Dip the small pieces & place on top of the large pieces & sprinkle with coconut.
