Method

Chocolate Pastry

  • Using a planetary mixer and beater combine the Patacrout, cocoa powder and butter and mix to form a crumb, add the eggs, and mix to form a dough. 
  • Laminate the dough to 3mm and line the tart rings.

Brownie

  • Using a planetary mixer combine all the ingredients. 
  • Mix for 1 minutes at slow speed. 
  • Mix for 1 minutes at medium speed. 
  • Deposit the batter at 40g into the lined tart rings. 
  • Top with 25g of luxury mincemeat. Bake at 180°c for 20-25 minutes. 
  • Once cooled top with 10g of Cremfil Ultim chocolate and a chocolate decoration.
